Did you know? Many people often assume that a paler rosé is always dry, while a dark rosé is sweeter. But not so! Neither is it simply a matter of blending red and white wines. So then,how is a rosé produced?

Modern rosés are largely influenced by the Provençal style using only red grapes. The deeper the colour, the longer the skin contact and the fuller-bodied the final wine. Darker rosés may spend several days in contact with the skins. But that’s not the only deciding factor, of course!

The colour is also dependant on the grape varietal. Cabernet Sauvignon or Shiraz tend to yield rosés with deeper colours, while in contrast Pinot Noir is often used for producing lighter-coloured rosés. So next time you’re sipping rosé with friends, you’ll be the one in the know! 

As for which to choose for your personal palate, dry rosés are often considered fruitier, with lingering fresh flavours and very little residual sugars. Conversely, sweet rosés are achieved by the winemaker halting the fermentation process before all the natural sugars have been converted into alcohol, or further sweetened by adding concentrate.

You might have heard the French phrase “Rosé tout l‘année” or rather, “Rosé all year”, which is a testament to the perennial role that rosé plays in European lives. Locally, it is enjoyed as a refreshing refrain from the aggressive heat of the African summer, and can be spotted at most braais and other sunny occasions. It pairs beautifully with the smokey, salted braaivlies, salads, as well as biltong and charcuterie. And, when the cool weather returns, rosés happily cosy up with warm savoury flavours of a classic bouillabaisse, poultry dishes and risottos.
